Strawberry Fudge Black Bean Brownies

While black beans might seem like an odd ingredient for a dessert recipe, they help add a healthy dose of fiber and give the brownies a dense, fudgy texture. The batter for this recipe couldn’t be simpler, just add in all of the ingredients into your blender (minus the chocolate chips) and let it do the work for you. The strawberry jam comes together quickly and you’ll have plenty leftover to use on toast, yogurt or pancakes.

Fudgey Berry Black Bean Brownies

Prep time: 25 minutes | Serves: 12

For Strawberry Jam

  • 3 cups frozen strawberries
  • ¼ cup maple syrup
  • 1 Tbsp chia seeds
  • Pinch of salt
  • Juice of ½ lemon

For brownie batter

  • 2 chia “eggs” (mix 2.5 Tbsp chia seeds with 6 Tbsp water)
  • 3 Tbsp olive oil
  • ¾ cup unsweetened cocoa powder
  • ¼ tsp vanilla extract
  • 1 can (15 oz) black beans, drained and rinsed
  • ½ cup brown sugar
  • ½ cup mini chocolate chips
  • Sliced fresh strawberries for topping, optional

Directions:

For strawberry jam:

  1. Place strawberries in a medium-sized sauce pot, cook over medium-high heat until strawberries are cooked through and their juices are released. Stir and muddle frequently.
  2. Once most of the liquid is cooked off, add lemon juice, maple syrup, chia seeds, and salt.
  3. Once mixture has reached a think consistency, remove from heat and puree in a food processor or with immersion blender. Set aside.

For brownies:

  1. Preheat oven to 350 degrees. Lightly grease a heart-shaped muffin tin with cooking spray.
  2. In a small bowl, mix chia seeds and water together and set aside.
  3. In a blender, add black beans, oil, cocoa powder, vanilla, and baking powder. Scrape down sides of the blender and add sugar and chia egg mixture. Blend until smooth. Add a tablespoon or more of water if batter is too thick.
  4. Stir in chocolate chips until combined. Spoon mixture into greased muffin tin, making sure to evenly distribute the batter.
  5. Spoon a dollop of strawberry jam onto each brownie. Use a knife or toothpick to gently swirl together.
  6. Bake for 25-30 minutes, or until the top has formed a crust and the batter begins to pull away from the sides of the pan.
  7. Cool before removing from pan. Serve with fresh sliced strawberries, ice cream, whipped cream.
